Gluten free is the way to go for most of us these days. And sugar free makes me so happy. I don’t want to have to deal with the calories that sugar offers these days. I’d be happy to shove them under the carpet. I’m dealing with a whole lot of issues otherwise.
So, I’m on a low carb keto diet these days. And I haven’t had sugar for ages. Seriously need a happy cookie often to perk up my sagging spirits.
But that doesn’t mean that the need for sugar subsides. Its always there like a sleeping dragon. You just have to be that controlling mom and make sure that it comes out when you want it to. Not whenever it wants to. Too many references to game of thrones in our lives. I’m managing mostly , but by virtue of the fact that I’m a baker and friends expect me to bake, I bake stuff. Keto or no keto, flour does get converted to cookies and cake.
And no-flour ,or nut meal will also get converted. So we’re converting these almonds from Dry fruit zone to nut meal at home. You don’t need to order almond flour every time you want to bake gluten free cookies. Just ensure the nuts are fresh . Pulse them in a spice grinder and then sift through a soup strainer.
That works fine because these are whole almonds that have not been defatted. So more wholesome and nutritious for you.
The xanthum gum is essential, as that is what holds the cookies together. Without this, your cookies will crumble. Any gum will do.

Collect the ingredients and make these cookies. I’ve also made a video that I’ve posted on Facebook and Instagram that you might like to watch before you make the cookies.
If you’re calculating the macros, from the entire ingredient list, when you make 20 cookies, you get less than 2 net carbs per cookies.
They are not crisp, but cake-y. If you want them sweeter , add more sweetener. Erythritol works best and has a cool taste on your tongue. I’ve flavored these with Cinnamon. Make them with Lemon if you wish.
Its all about how your taste buds dictate or blow the heat on you.

Gather your ingredients and lets get baking.
Easy Keto Gluten Free Cinnamon Cookie
1 cup plus 2 tbsp almond flour
1/3 cup erythritol (increase to 1/2 cup if you’re looking for sweeter cookies
1/2 tsp xanthum gum
1/2 tsp baking soda
1/2 tsp salt
1/4 cup or 60 gms melted ghee or butter
1/2 tsp vanilla essence
1/2 tsp cinnamon essence -optional (I used Ossoro Essences)
1 tsp cinnamon powder and 1 tsp erythritol to roll the cookies in
Grind the almonds, sift and set aside. Start with the pre ground almond flour if you’re using it.
In a bowl place the ghee and whisk in the erythritol and mix till the ghee is lightly creamed.
Add in the egg.
Mix in the vanilla, cinnamon essence. Now add in te almond flour, xanthum gum, salt and baking soda.
Mix well and set aside for 10 minutes.
Preheat the oven to 180C and line a baking tray with parchment paper.
Mix the cinnamon with the erythritol.
Make small balls of the cookie dough and roll in the cinnamon mix.
Place on the parchment paper and then flatten with a fork. Bake for 10-11 minutes in the oven .
Remove and allow to cool.
Lift off the parchment paper and store in an air tight box in the fridge.
These will last you more than 10 days in the fridge.
