Brownies and motivation really go hand in hand . I am talking about the motivation to be healthier.

So, if you have been following me on Instagram and Facebook you would have seen that I have given up sugar since the 1st of January.
One of the perils of being a Baker is being exposed to insane amount of sugar. And butter. I may not be consciously eating the sugar, but every time I make something different and baking something new for the website just to check the balance of flavours of the taste ,invariably I would eat a few spoons…So zero sugar is important.
And these few spoons had made me become addicted. I was literally addicted to sugar and used to crave sugar every few hours I needed something sweet to eat every few hours . You do know what sugar does to your body? I am not in favour of banning everything from my life, because I believe in moderation. So a moderate amount of every indulgence is always good for you
After all you cannot stop living all together. And because you are alive ,you will smile, you will taste, you will feel the beauty that all these foods and flavours have. It’s just not fair to deny yourself the good things in life.
After my blood tests in December, I realised that I had to take a call. Before things got out of hand and I ended up with lifestyle diseases, I needed to get a grip on my self, after all ,my body is my temple . It’s where my soul lives ,hence, I need to take care of it.
Before my sugar addiction could spoil my body forever ,I needed to ensure that I am not slave to sugar. So until I become physically fit and I am able to stave of cravings, I have resolved to stay away from sugar. I am currently on a keto diet that does not prevent me from baking and preparing food for those who are not. And I do cheat once in awhile, I mean I would not be human if I didn’t.
But after 75 days, I find that I don’t really need the sugar to function. And because I am not getting headaches ,I am happier. So I wouldn’t mind a small macaron, slice of cake once in a while because I know sugar will not dictate how my moods swing or how my hunger pangs work.
I have been drinking a tiny amount of the whey protein isolate from nutrova for almost 20 days now. Since I am not doing extremely heavy weights, I am not taking the suggested dosage of 30 grams per day .The whey protein is helpful in repairing worn out cells due to exercise and exertion.
The best part about this whey protein isolate is, that there is absolutely no sugar in any form. It only consists of protein and chocolate and absolutely no carbohydrates.
Since I was really wanting to have a chocolate brownie, I decided to use this whey protein isolate to make my chocolate brownies. I did not add any sugar or artificial sweetner because now I find that I am absolutely fine without the addition of anything sweet with my chocolate. I have been enjoying dark chocolate lindt 70% to 85% and even amul 90% because the flavour of the chocolate comes across extremely well.
However if you do wish to add an artificial sweetner go right ahead.
Just ensure that you bake the brownies at 160 degrees centigrade as erythritol is stable only upto 160 degrees centigrade.
I have used butter which is the best thing you can use while you are on a keto diet. However if you wish to avoid that ,you can substitute the butter with 2 mashed bananas.
The one tablespoon of honey is distributed in 16 brownies so as long as you don’t eat the full tray of brownies in one day its ok. I have used a blend of butter and coconut oil because the flavour of coconut oil gets muted in butter.I want to try and include as much coconut oil in my diet as possible but the taste is taking a lot to get used to so I am in collecting a little bit at a time. If you would like to use coconut oil in total ,feel free to substitute the butter with coconut oil.
You may of course use any other whey protein isolate but do check out this on nutrova .

For the

Zero Sugar Keto Brownies

you need

1/4 cup plus 1 tbsp almond flour
1/2 cup whey protein isolate
113 GM’s or 1/2 cup butter at room temperature
1 egg
1 tbsp honey
2 tbsp coconut oil
50 GM’s 70% dark chocolate use Amul or Lindt
1/2 tsp coffee
1/3 cup milk or coconut milk or nut milk
Pinch salt
6-8 drops Ossoro Vanilla essence
2-3 fresh strawberry chopped or 1/4 cup freeze dried raspberry or strawberry
1/2 cup erythritol ground in the mixie
2-3 pieces dark chocolate chips or 55% chocolate chopped optional
2 tbsp freeze dried raspberry powder optional

In a Bowl, place the dark chocolate and coconut oil and microwave in spurts still the chocolate melts. Add the coffee powder and mix.
Preheat your oven to 160 degree centigrade and grease and line a square brownie tin with parchment paper.
In another bowl mix the butter with the egg. Whisk in the vanilla essence and honey and mix well.
In another bowl ,mix together the almond flour(I run my almonds in the spice grinder at home to get ready fresh almond flour) the whey protein isolate and the salt. If you’re using erythritol or the same amount of sugar, now is the time to mix it in.
Mix the butter and egg and then add in the chocolate, coconut oil and coffee mixture.
Mix well together to combine. Add the the fresh or freeze dried strawberries or raspberries if you’re using them.
Add in the chocolate chips and lighty mix.
Scrape into the brownie tin and bake for 20 to 25 minutes or until Done.
Allow to cool before cutting into 16 pieces.
Chill before you eat them, the chocolate on chilling tastes much better and you don’t really feel the absence of sugar. A small treat to keep you motivated.

I loved them best with cold brew coffee. The cold brownies taste really good with them. also, if you add fresh strawberries ,make sure you eat them within a week. Freeze dried fruit will have a better shelf life.
